When applying a discount rule to a collection, you can exclude some products from it. To do so, you must first select Applies To Whole Store and click on Exclude Products.

Untick any products that you wish to exclude and click Save:

A summary number of products excluded will be displayed here:

You can click on the link to see the details of the product(s) excluded.
